As a Southern girl myself, I felt I should write this week's newsletter in first person. Growing up in Tennessee, I consider myself a connoisseur of classic comfort food dishes. So, I found the best recipes that remind me of my grandma's down home cookin'. (You might want to put on your stretchy pants for these.)

Mac and Cheese
Mac and cheese from a box is quick, but there's noting like putting some real TLC into this creamy favorite. You can always go the classic route with hearty cheddar cheese, or take a tip from the South and add some bacon to the mix.

Casseroles Galore
Casseroles are one of my favorite things to cook because you can throw just about anything into a baking pan, add some butter and cheese and voila! You have a delish dinner in 30 minutes. Start with a staple like broccoli and cheese or sweet potato, then you'll be ready to branch out to something more exotic like overnight meatball casserole.

Homemade Pizza
It's not delivery, and it's definitely not from the freezer. Being in control of your own recipe means tailoring your pie the way you want it. I personally love a hearty whole wheat pizza, and hey, who says gluten-free pies can't be just as good? Plus, rolling out the dough with your own hands makes pizza even more comforting because you added your love! (Too cheesy?)

Buttermilk Biscuits
To me, nothing says breakfast like a big plate of biscuits and gravy! But in the Deep South, we eat biscuits at every meal (super healthy, right?). Have some cheddar cornmeal biscuits with your chili, or add a twist of sour cream. And vegans, we didn't forget about you this week: here's a great recipe for dairy-free biscuits.
