About Food & Drink: Cooking For Two

    About.com

This week's newsletter is dedicated to our Cooking For Two Guide Kevin D. Weeks, who recently passed away. We picked Kevin's best dishes to feature, and our other Food and Drink Guides contributed their perfectly proportioned recipes down below. All in honor of Kevin.

    Beef Wellington
A chef himself, Kevin described this dish as "elegant, easy, exceptional." While classic Beef Wellington - a popular dish in high-end steakhouses - may sound intimidating, Kevin's recipe is easy to follow. It's a sure treat for date night at home.

    Italian Apple Cake
"So good it should be illegal," were Kevin's own words for this dessert. And we have to agree! The succulent dish may be great for the colder months, but apples are always in season.

    Muffaletta Sandwich
While Kevin resided in Tennessee, he loved this famous New Orleans sandwich. The meal takes 10 minutes start to finish, so it's a quick dish to put together tonight (or a picnic this weekend!). But, don't leave out the olive salad, a component that Kevin said is a must.

    Beer-braised Lamb Shanks
Save this dish for a night when you have lots of time on your hands. Kevin was all about hearty meals, and he poured some of his best restaurant expertise into this one. We recommend grabbing a nice bottle of Cabernet Sauvignon for this meal.
