One of the worst things about winter -- aside from shoveling snow and scraping ice off the car windshield in sub-freezing temperatures -- is the overall lack of fresh, in-season fruit. By the time March rolls around, we're craving a serious dose of natural Vitamin C! Fortunately spring is just around the corner, so today we're sharing a few fruit-based recipes and cooking tricks in advance of the long-awaited change of the season.

Tips for Cooking with Plantains
To the untrained eye, a plantain could easily be mistaken for a banana. It looks and smells like one, but if you ever bite into a raw plantain (yuck!), you'll know it's not. Don't worry, though, they're absolutely delicious after being cooked.
