St. Patrick's Day is this Saturday, which means that millions of Irish-Americans (both actual and self-identified) will be indulging in all sorts of feasts and festivities honoring the Emerald Isle and her patron saint. On that note, we're having a look at literary Ireland this week.

As we look ahead to spring, I can think of no better food to lead with this week than the humble egg. Very few foods can match the egg in terms of nutrition. And as far as its cholesterol is concerned, it is thought that dietary cholesterol has less effect on blood cholesterol than saturated fat and trans fats.

The Incredible Egg
Why are eggs so incredible? As Laura Dolson, our Low Carb Diets Guide, writes, "Its purpose is to bring new life into the world and to nourish that life until it reaches the point where it can survive on its own. No wonder eggs are one of the most nutrient-rich foods available to us."

Low Fat Irish Soda Bread
Traditional Irish Soda Bread requires only a few simple ingredients: flour, baking soda, salt and buttermilk. Throw in a cup of raisins if you like, and some orange zest, too, but the more authentic version is made without these, as it was originally made as a daily bread to accompany meals.

Spinach Salad With Homemade Gluten-Free Dressing
